Avial or Vegan Coconut Vegetable curry

Mild spicy and sweet Indian curry with a perfect blend of spices and flavour of coconut

How to eat it?

This is enjoyed as a full meal when eaten with rice/Indian flatbread / Indian fried flatbreads / any other bread of your choice.. Best eaten at lunch or dinner.



Ingredients

1/2 Fresh coconut 🥥

1 tsp cumin seeds

2-3 green chilis (Red chillis may be used if Green is not available)

1 small potato cut in cube sized pieces

1 carrot cut in cube sizes or round slices

1 drumstick (peeled and cut in 1/2 inch length pieces) (Optional)

100-200 grams beans cut in length

3-4 curry leaves (If you find them add them)

Recipe

👩‍🍳 Grind coconut, cumin seeds and green chilli to make a paste

👩‍🍳 Boil all the vegetables with some salt in a bit of water🧂

👩‍🍳 Add the grind paste to the boiled vegetables and give one simple boil with the curry leaves.

👩‍🍳 Add additional salt per your taste and enjoy hot.


For seasoning

In a pan heat oil and add mustard seeds

As soon as they begin to splutter add the curry leaves

Roast for few seconds and add it to the curry
