Drumstick/Moringa sambar

#sambar is a lentil variety dish enjoyed with #whiterice , #idli or #dosa . This is a popular dish from #southindia where my roots are from.. This dish is a #fullmeal best enjoyed at #lunch and #dinner.



To reap maximum benefits from Moringa, cook them fresh and consume them the way you like. Try to avoid supplements as much as possible and give your body a treat and a good taste by consuming fresh vegetables. Liking and enjoying the food is just as important as it is to sleep well. I am sure you will be able to find it either in your local #sabjimandi or from a local #farmer etc….No matter where you are there are limitless vegetarian and vegan food varieties available around loaded with unknown and unimagined health benefits.

Ingredients

4 long Drumsticks peeled & cut in 2 inch long pieces

1 cup washed toor dal

3 onions cut in big pieces

1/2 tsp turmeric powder

1 tbsp groundnut oil

1 lemon sized fresh tamarind or 1tbsp tamarind paste

4-5 tsp homemade Sambar powder (You may also use #MTR Sambar powder)

5-6 Curry leaves

1tbsp fresh coriander leaves

1/4 tsp Asafoetida

1 whole red chilli for garnish

1/2 tsp mustard seeds

Salt to taste

Recipe

👩‍🍳 Pressure cook the lentil in 5 cups of water with oil and turmeric powder for 3 whistles

👩‍🍳 Once cooled down, add drumsticks, onions, curry leaves, salt and carefully cook without whistle in the same pressure cooker.

👩‍🍳 Add tamarind paste, sambar powder and boil for 2 minutes


For tadka

👩‍🍳 Heat oil in a pan

👩‍🍳 Add mustard seeds, once they begin to splutter add asafoetida , red chilli and stir for few seconds

👩‍🍳 Add this tadka to the sambar and serve hot with rice 🍚 of your choice


Note: Drumsticks should not be cooked too much.
