Eggplant Roasts 🍆

This is yet another #sidedish well relished with #rice and #lentils of your choice, This is a popular #southindian dish and completely #vegan. .


I like them crispy and spicy with all home made masalas. If you read me regularly you would note that I use oil at a bare minimum and just to keep the taste of dish alive. I also am not a fan of packaged foods so make the dishes from scratch. Until I learnt this recipe from mom, I must mention I was not a very big fan of eggplants.. #Chatpata khana as I call in Hindi is relished by most of us and when it can be made so healthy we remain guilt free too.


How to eat?

😋 Have it as a side dish with rice

😋 This also can be enjoyed as a snack ite

😋 Can be enjoyed alone without any sauce

Ingredients

👨‍🍳 1 big sized eggplant

👨‍🍳 1 tbsp gram flour

👨‍🍳 1/2 tsp red chilli powder or #MTR sambar powder (Preferably #homemade)

👨‍🍳 1/2 tsp turmeric powder

👨‍🍳 1 tbsp tamarind paste

👨‍🍳 4 tbsp Fine semolina or rice flour

👨‍🍳 2-3 tbsp oil for roasting

👨‍🍳 1-2 tbs water

👨‍🍳 Salt to taste

Recipe

👨‍🍳 Thinly slice the eggplant in perfect round shapes and soak them in salt water for 10 minutes (removes the bitterness of eggplant and to absorb the taste better)

👨‍🍳 Take a deep bowl and add all the ingredients except the rice flour or semolina and oil

👨‍🍳 Add some water to the dry ingredients and make a thick paste from it

👨‍🍳 Heat a pan and sprinkle 1 tbsp oil on it

👨‍🍳 Dip the eggplant slices in this mixture well on both sides

👨‍🍳 Dip it again on the dry rice flour or semolina on both sides and place on the heated pan

👨‍🍳 Roast it well on both sides with very little oil

👨‍🍳Serve hot

Note:

Eggplants raw are bitter to taste and hence soaking them in salt water not only helps to reduce the bitterness in it but makes the salt absorb well in it.

I personally prefer either olive oil or groundnut oil to prepare this dish but any other oil will do good as well.
