Lemon Rice is a famous rice dish from Karnataka usually enjoyed in festivals.
Lemon rice, #Kosambari (typical South Indian salad) , #rasam (lentil &tomato soup )and rice kheer (Indian rice pudding) is something that is enjoyed during most Karnataka festivals. My mom cooks it at our home using a special ground masala in lemon rice.

Ingredients
250 gram Sona Masoori Rice 🍚 (Donot use Basmati Rice)
8-10 cashew-nuts
1tbsp raw peanuts
1 tsp Split Chickpeas (brown) Chana Dal
1tsp Split and dehisced black gram lentils Urad Dal
1 tsp mustard (sarson) seeds
1 tsp cumin (jeera) seeds
1 tsp coriander powder
1 tbsp roasted gram lentils
Pinch of asafoetida
1/4 tsp turmeric powder
1 big yellow lemon juice 🍋
2-3 green chillies
5-6 curry leaves
1 tsp salt
2 tbsp groundnut oil (use any other vegetable oil of your choice)
1 tbsp chopped coriander leaves
Recipe
Cook the rice with 1/2 tsp oil and 8-10 drops of lemon 🍋 juice. Once cooked spread the rice in a large bowl and mix remaining lemon and salt 🧂 (Based on your taste you may increase or decrease the quantity )
Parallel
Heat the frying pan and lightly roast cumin , mustard, roasted gram dal. Make a coarse powder of this in a mixer or best using a grinding stone.
Heat the oil in the same pan, add chana dal , urad dal and groundnuts.
Once they turn brownish red, add the cashew-nuts.
Further add all the left over ingredients and mix well.
Cook the mixture for maximum 2 minutes and turn off the heat.
Allow the mixture to cool down, mix it with the rice 🍚 and serve
If you have fresh coconut available , you may add the grated coconut 🥥 for garnishing.

In my house Lemon rice is cooked by my mom on all festive occasions. Most of my friends and family members are a big fan of this dish. You wont believe that we made this dish tons of times for thousands of guests /friends /relatives and no one could resist it. This was the most loved dish at the time when my mother started a small #homerestaurant called as Brinda's South corner.
