Ragi Pancakes + Peanut Dip

Very quick and nutrient loaded breakfast option for busy days, busy people, not so busy people and for those who like to have a change in daily routine meals with uncountable health benefits. Some of the benefits are listed below

Ingredients for Ragi Pancakes

1 cup Ragi flour (Finger Millet flour)

1 cup coarse semolina

1 cup Rice flour

Salt to taste

2 tbsp Vegan yogurt (optional)

1 tbsp Cumin seeds (optional but tastes good)

1-2 cups water

Recipe for Ragi Pancakes

👩‍🍳Simply mix all the above ingredients Ragi flour, rice flour , coarse semolina, salt, cumin seeds in 1 cup of water or more. Check the consistency. Add vegan yogurt and mix well

👩‍🍳Let the mixture rest for about 20 minutes

👩‍🍳Heat a flat pan (tawa), grease with some oil using a oil brush (I use half raw onion to grease my pans)

👩‍🍳Pour using a ladle small portions of the batter to hot pan and spread gently

👩‍🍳Sprinkle little oil drops if needed

👩‍🍳Roast by flipping sides in medium heat

👩‍🍳Once crispy brown, remove from the pan and the pancake is ready to eat.


Ingredients for Peanut Dip

1 cup Raw peanuts or for ease also use packed peanut nuts from a grocery store

2 whole green chilli or red if green is not available

1 tsp tamarind paste

Salt to taste

Fresh shredded coconut or even use dry coconut from the grocery if fresh is not available

Water as needed to make a dip consistency

Recipe for Peanut Dip

👩‍🍳Dry roast raw peanuts in a pan until brown and spluttering. (Easy way is to place them in oven for 90 seconds in intervals of 30 seconds 3 times)

👩‍🍳Add the peanuts once completely cooled down with chilli, tamarind, salt and coconut to a mixer jar

👩‍🍳Add a little water initially and blend well for 5 seconds

👩‍🍳Mix well the ingredients in jar and add more water

👩‍🍳Blend again until thick dip consistency is formed
