Sweet & SourZucchini - Green Pumpkin curry /Summer Squash

North Indian side-dish sweet and sour in taste is another quick to prepare dish. I love it for the sweetness in it. The spices to prepare this dish are also unique unlike many curries.. Enjoy this homecookedrecipe.

This is enjoyed as a #sidedish with #rice or #roti

I love to eat it with my husband 😆

Ingredients (Serves 2 might vary again from person to person)

250 gm Zucchini cut in small cubes

2 whole red chilli 🌶

1/2 tsp asafoetida

1tsp fenugreek seeds

2-3 cloves

1/2 inch cinnamon stick

1/2 tsp turmeric powder

1 tsp dry mango powder or 1 tsp tamarind paste

1 lemon sized jaggery or 1 tbsp jaggery powder

salt to taste

Recipe

👩‍🍳Heat the oil in a pressure cooker

👩‍🍳Add the fenugreek seeds, cloves, cinnamon and stir well

👩‍🍳Now add the red chilli, asafoetida, turmeric powder and salt

👩‍🍳Add the zucchini, stir and pressure cook for 1 whistle

👩‍🍳Mash the zucchini later once cooled down

👩‍🍳Add dry mango powder, jaggery and mix well
