Vegan Carrot Halwa /Vegan Carrot pudding

An Indian desert delight which is made using grated carrots , milk and butter. Very popular and is mostly eaten during the festive time of the year.

How to eat it?

Eat it as as Desert in any festive occasion or on any other day even. Eat it hot with some fresh cream or icecream

Ingredients

15-20 carrots big sized washed and peeled

15-20 cashews

6-7 Pistachios

1 tbsp cardamom powder

2-3 tbsp vegan butter (vegan ghee)

5-6 cups of vegan milk (I used almond milk from Alpro)

5-6 tbsp cane sugar

Recipe

👩‍🍳 Grate the carrots using a hand grater or a food processor. Using the practical ways of cooking I grated the carrots using my Bosch food processor.

👩‍🍳Heat the pan (Non stick or any iron thick bottomed pan) and add all of the grated carrots.

👩‍🍳Cook the carrots in a low flame for 10 minutes and then add vegan milk. I added almond milk from Alpro but you can choose the milk based on your taste.

👩‍🍳After some time the milk will begin to froth first and then start reducing slowly and slowly.

👩‍🍳Keep on stirring this halwa mixture from time to time. Keep scraping the sides of the pan to remove the evaporated milk solids. Add the milk solids to the cooking mixture. simmer carrots in milk and stir also at intervals, so that the milk does not stick to the bottom of the pan.

👩‍🍳Cook the carrot+milk mixture till milk is reduced to its lowest level.

👩‍🍳Now add the vegan butter (vegan ghee) and stir well

👩‍🍳Add cane sugar or any other planed based sugar and mix well

👩‍🍳Add cardamom powder and mix well

👩‍🍳Continue to simmer on a low flame. Do stir often.

👩‍🍳Simmer till the halwa mixture starts to thicken and reduces more.

👩‍🍳Stir at intervals.

👩‍🍳Soon you will see the halwa has reduced much and you see a little milk. This is the consistency we need for this pudding

👩‍🍳In a separate pan roast the chopped nuts and add them to the carrot +milk mixture

👩‍🍳Simmer till the whole halwa mixture becomes dry. The milk should evaporate completely and you will see fine milk solids in the carrot halwa.

👩‍🍳We will also see some butter released on the sides of the pan but not so much visible when cooking in a non stick. Hence carefully watch and cook this pudding.

👩‍🍳Dish is now ready. Serve hot

👩‍🍳Can be stored for unto 1 week in any steel container and refrigerated.
