Vegan cutlets without potato

#Tikki is a very popular #streetfood in the Indian subcontinent. Usually it is made from boiled potatoes with a combination of some veggies and spices deep fried.. I love this chat a lot so wanted to come up with a perfect healthy option of the dish. The speciality of this dish is that there are no potatoes in it and oil is just sprinkled..

Crispiness is not compromised and the taste makes you want them eat more and more.. So come drool 🤤in for Vegan Savoury Cutlets / Tikki Chaat /Vegetable Cutlet or croquette as you want to call it .

How to eat it?

This cutlet is usually eaten as a evening snack

It can be eaten with tomato sauce, tamarind sauce, mustard sauce or mint and coriander chutney

It tastes great when had with some vegan yogurt (any other yogurt of your choice) seasoned with chopped tomatoes and onion.

Ingredients (Makes 6-7 cutlets)

2 bread slices 🍞( I used vegan bread but you may use the bread of your choice)

1 cup bread crumbs ( I sun dried my vegan bread and the grinded it to make the crumbs at home)

2 carrots 🥕

1 cup chopped broccoli 🥦

1 cup chopped cauliflower

1 cup fresh peas (frozen peas will also do fine)

2 tbsp coriander leaves

2-3 chopped chillies

5-6 curry leaves

1 tsp coriander powder

1 tsp fenugreek powder

2 tbsp groundnut oil (use any other vegetable oil of your choice)

salt to taste

Recipe

👩‍🍳 Pressure cook the vegetables without water and with some salt for 1 whistle (Remember to cook the vegetables in a separator within the pressure cooker)

👩‍🍳Let the vegetables cool down and if any water remains drain and collect it separately ( Try keeping the drained water and add it while cooking any other dish during the day so that nutrients are not lost)

👩‍🍳Gently mash the vegetables in a big plate

👩‍🍳Dip a bread loaf in water and mix it with the mashed vegetables after removing the excess water from the bread

👩‍🍳Add the coriander leaves, curry leaves, coriander powder, fenugreek powder,, salt and gently mix them

👩‍🍳Take small rolls from the mixture, press using hand and make circular shapes out of them.

👩‍🍳Dip both sides of the cutlet in bread powder and keep aside.

👩‍🍳Similarly prepare some cutlets like above and keep them aside

👩‍🍳Heat a pan and sprinkle little oil on it

👩‍🍳Once hot, place the cutlets and roast them for 5-10 minutes on both sides

👩‍🍳Once you see them turn brownish on both sides, they are ready to be served

👩‍🍳Add some tomato sauce, tamarind sauce, yogurt on top of it and enjoy.
