Vegan Sesame nut balls

Perfect snack option during winters. Sweet, tasty, healthy and a quick to make option. Enjoyed by children and adults

Ingredients
1/2 cup sesame seeds (White sesame or brown sesame can be used. Note. White sesame as a bit strong taste but I like it so used it in this recipe)
1 tbsp white sesame seeds additionally
1/2 cup mixed nuts (Try adding nuts you dont like to eat otherwise .. I added dry sunflower seeds + dry pumpkin seeds)
1/2 cup powdered jaggery
3-4 tbsp water to make jaggery paste
Pinch of salt
Recipe
Preparing sesame and nuts mix
👩🍳Heat a wide bottomed pan and add the sesame seeds to it. (Pan should always be in low heat else will burn the sesame)
👩🍳Roast on a low flame the sesame seeds for some time stirring in intervals (until they start to change colour. Do not let them turn brown)
👩🍳Remove and set aside in a plate
👩🍳Add the mixed nuts and roast similarly for 2-3 minutes while stirring in intervals
👩🍳Remove and set aside in a plate
👩🍳Allow above to cool down completely
👩🍳Coarse grind them in any mixer you have at home or simply grind using a hand grinding stone
👩🍳Keep them ready in a bowl
Preparing Jaggery paste
👩🍳In the same hot pan from above add jaggery, pinch of salt and water
👩🍳Keep stirring well continuously trying to dissolve jaggery in water
👩🍳Add a few drops more water only if the jaggery used needs a bit more of water to dissolve
👩🍳Slowly the consistency of the paste will begin to thicken
👩🍳Check the paste using your fingers. If the paste is sticky this means it is done
Preparing balls
👩🍳In the bowl of roasted sesame and nuts add the jaggery paste
👩🍳Add additional sesame 1 tbsp and start mixing it well
👩🍳Nicely mix the complete mixture using a spoon or a spatula
👩🍳While the mix is still warm, start taking 1 tbsp mixture in between your palm and roll it nicely in ball shapes
👩🍳Repeat it for all the above mixture quickly as we dont want to let the jaggery paste to cool down
👩🍳Set aside and let completely cool down
👩🍳You will notice that the balls dry up and are ready to be consumed
Tasty and healthy nut sesame balls are ready. Store them for up to a month in any airtight container
