How to eat it?

This is enjoyed as an Indian desert on most festive occasions like Dusshera, Diwali with fried Indian flatbreads or even alone.


Ingredients

1/2 cup Semolina

1 – 1.5 Coconut oil or any other oil of choice

1/2 cup warm-hot water

3 Tbsp brown sugar or more as per taste

1/8 teaspoon cardamom powder

3-4 saffron strands soaked in water

pinch of salt(if using oil)

1/4 cup cashew pieces

1/4 cup golden raisins

1/8 cup pistachio and sunflower nuts

Recipe

👩‍🍳Heat a thick bottomed pan.When hot, add oil. Add cashews and roast for a minute.Keep aside later

👩‍🍳Add golden raisins and roast for half a minute. Keep aside later

👩‍🍳Add other mixed nuts like sunflower seeds and pistachio and roast for 1/2 min.Keep aside later

👩‍🍳Once all the nuts are removed from the pan, add 1 tbsp oil and add the semolina and cook for 2 mins, stirring occasionally. The semolina will start to get puffy.

👩‍🍳Turn the heat to lowest flame.

👩‍🍳In a separate pan make a mix of water and sugar (Slightly thick syrup) so that sugar is mixed well with water.

👩‍🍳Add the sugar syrup, a pinch of salt and saffron to the semolina pan and mix well.

👩‍🍳Close the lid and set aside.

👩‍🍳Garnish with more nuts
