Steamed Savoury rice cakes/ Idly from scratch

Idli or Savoury rice cakes is a most loved dish in the Southern part of the Indian subcontinent.and a super food for vegans/ vegetarians and everyone.


It is such a power nutrient cake which I have known and learnt it from my mother since many years.. In my view the texture and softness of this dish is the most important part and should be done without the use of any artificial ingredients.. Here I present to you the making of Idly batter as I was taught by my mother.



How to eat it?

This is enjoyed as a healthy breakfast option, trip lunchbox option and an easy digestible food for kids , adults, old age..

Best eaten with Sambar,(Lentil soup), chutney, Lentil Coconut Dry Condiment, Coconut chutney, Dry Coconut Condiment sprinkled with some coconut oil.


Ingredients

1 cup Urad dal/ Split and dehisced black gram lentils

2 cup rice (Preferably Idly rice or any other rice will also do fine)

1 tsp fenugreek seeds

2 tbsp groundnut oil (any other oil of your choice for greasing)

salt to taste

Recipe - Savoury Rice cake batter /Idly Batter

👩‍🍳Wash and soak Urad dal/ Split and dehisced black gram lentils, rice, fenugreek seeds for 6-7 hours in double the amount of water.

👩‍🍳Later grind this mixture using a high powered grinder or mixer in medium speed in intervals of 30-45 seconds. Keep adding a bit of water as you proceed grinding

👩‍🍳The ground flour should have a coarse consistency like this

👩‍🍳Keep this mixture in a warm place for 6-7 hours for fermentation

👩‍🍳Add salt mix well and the Idli batter is ready

👩‍🍳Can be stored in refrigerator for 2-3 days.



Recipe - Savoury rice cakes / Idly

👩‍🍳Take 2 cups of water in a wide bottomed Idly stand and turn on the heat

👩‍🍳Grease the Idli stand trays and keep aside

👩‍🍳Evenly pour the batter in each section of the tray and place them in the Idly stand

👩‍🍳The holes of each tray kept in parallel to each other should not block the pores of each other

👩‍🍳Cook closed for 5-7 minutes. and as soon as you see the steam remove the stand from heat

👩‍🍳Dip a wide spoon in water and remove the Idly from the tray sections


If you do not have the Idly trays, feel free to steam in any other tray shapes too just like below. I call it as Plate Idly as it resembles the shape of a plate.


Total

Grinding time 10 minutes with breaks

Soaking of lentils 6-7 hours

Fermentation of the mixture 6-7 hours

Cooking time 5-7 minutes
